When I make Eggplant Parmesan, I blanch chard & add the greens into the layers of sauce & mozzarella. I also add a big Italian green salad on the side, full of spinach, radicchio & romaine lettuce. Fill up on veggies to balance the indulgence. I also bake my eggplant parm, I don’t fry it. Easy healthy swap without sacrificing flavor.

Romesco sauce is a roasted red bell pepper sauce. Romesco sauce is a roasted red bell pepper sauce. It’s usually made with bread crumbs so I never get to eat it at restaurants. I swap the bread for slivered or sliced almonds. It’s delicious! Use as a sauce, dip, spread, and more. Put it on everything, from salad, veggies to chicken. Wanted to share a little bit more about me 👩🏼‍🍳
- I graduated culinary school from @naturalgourmetinstitute in NYC (now apart of @iceculinary ) No white sugar or white flour in school, it was an alternative health supportive program that I loved.
- Prior to becoming a chef I worked as an HR Manager & Corporate Recruiter.
- I’ve always been into holistic & alternative wellness practices, for 20+ years. What is normal wellness & self care now use to be fringe. I’m so happy to see people embracing wellness of all forms.
- I’ve worked in farm to table restaurants in NY and Newport Beach. Restaurants are a great place to learn.
- I’m a Medical Intuitive (also known as a Medical Medium). This allows me to find the root cause of a clients dis-ease & discover what they need to do to free them self of the pain or the cycle. People come to me for food allergies, depression, anxiety, back pain, or a general check up.
