Tarragon Vinaigrette
Enjoy this a fresh and light salad dressing on any side salad or entrée. This recipe is a healthy herb vinaigrette with lemon, vinegar, shallot and Dijon mustard.
HOW TO USE TARRAGON
This delicate gray-green herb has a distinct subtle anise taste. It is common in French cooking, whether use in vinaigrettes or sauces. Think traditional tartar and bearnaise sauce.
The use of this tarragon vinaigrette elevates an ordinary salad. Its flavor is sophisticated and multidimensional.
TARRAGON SUBSTITUTE
If you can’t find fresh tarragon for this dressing, substitute with flat leaf Italian parsley or 1 tablespoon of dried tarragon. Note that dried tarragon does not hold its flavor well, reach for fresh if you can.

Description
Fresh and light vinaigrette using the classic French herb, tarragon. This recipe is a healthy dressing with lemon, vinegar, shallot and Dijon mustard.
Ingredients
- ¼ cup rice vinegar (sugar free) or champagne vinegar
- Zest and juice of 1 lemon
- ½ small shallot
- 1 tsp Dijon mustard
- 2 tsp local honey
- ¼ tsp sea salt
- ¼ tsp black pepper
- ½ cup fresh tarragon leaves
- 1 cup extra virgin olive oil
Instructions
- Using a high-speed blender, combine vinegar, zest and juice of lemon, shallot, mustard, honey, sea salt, black pepper, fresh tarragon. Blend to combine. Slowly poor in oil and blend till smooth and emulsified.
- Enjoy with Heirloom Tomato & Summer Corn Salad or Radicchio & Golden Beet Salad with Warm Barley. Store in an airtight container or small glass jar for up to one week.
