Easy Baked Lemon Butter Rockfish Recipe
This is an easy baked fish recipe with lemon butter sauce. You can use rockfish, tilapia or any in season white fish.
This recipe works well for a healthy meal prep, paired with steamed vegetables and rice.
This one pan dish is great for those following a Paleo, Gluten Free or Keto diet.
EASY BAKED FISH RECIPE
I make this recipe for my clients meal prep and make little adjustments depending on the season. It is easy to use a variety of white, flaky fish that allows you to repeat the recipe without getting board.
If you love a lemon butter sauce with your fish this is the recipe for you. No extra work required as the sauce is built into the cooking process.
Pair this dish with steamed broccolini, spinach, blanched chard or broccoli florets. I also like serving it with a side of rice, wild rice, polenta or millet.
A FISH RECIPE FOR MEAL PREP
This recipe is versatile. I use rockfish, tilapia, haddock or hake. Any thin, white fish will work well.
When making this dish for meal prep, plan to cook it the same day. The lemon juice slowly cooks the fish, so you do not want it to marinate more than 24 hrs.
I prep this dish in a Pyrex casserole dish when I meal prep. If you aren’t prepping this in advance, bake it on a baking sheet. Use parchment paper for easy clean up. I always use If You Care Baking Sheets, which are pre-cut, chemical free and unbleached.
Be sure to pull the fish out of the fridge at least 30 minutes before cooking so it can come to room temperature (which will allow it to cook more evenly).
WHAT KIND OF FISH CAN BE BAKED?
Most fish bakes well and is my preferred method for cooking fish at home. It is easy to prepare and clean up.
This baked fish recipe works best with white flaky fish. If rockfish is not available, swap for any of these varieties.

CHEF TIP
You can use a baking sheet, or a casserole dish for cooking the fish. Whichever is more convenient for you. I like using a tradtional casserole or Pyrex dish so I can prepare the fish in advance and store in the fridge till I am ready to bake and serve dinner.
Remember to always pull your fish out of the fridge at least 30 minutes before cooking so the fish comes to room temperature and the results is more event cooking.

Description
Easy baked fish recipe with lemon, butter, garlic and cherry tomatoes. You can use rockfish, tilapia or any in season white fish for easy family dinner or meal prep recipe.
Ingredients
- 3–4 rockfish or tilapia filets
- 2 TBSP extra virgin olive oil
- 4 TBSP organic butter, divided
- 4 garlic cloves, minced
- Juice of 1 lemon
- ½ tsp sea salt
- ¼ tsp coarse black pepper
- ½ tsp red pepper flakes (optional)
- 1-pint organic cherry tomatoes
- 1 TBSP minced parsley
Instructions
- Preheat oven to 400 degrees. In a medium saucepan, add olive oil and cherry tomatoes on medium heat. Let simmer till the tomatoes start to soften, about 5 minutes. Add two tablespoons of the butter and let melt.
- Remove pan from heat, add garlic, juice of lemon, sea salt, black pepper and stir to combine.
- Prepare a baking sheet or dish with parchment paper and add the fish. Pour sauce and cherry tomatoes on top, evenly coating the fish, add the remaining butter evenly on top of fish filets. Bake for 10-12 minutes still flaky and cooked through. Serve with steamed vegetables and rice.
