YELLOW TOMATO GAZPACHO
My clients, family and dinner party guests say it is the best gazpacho recipe. What amazes them is that there is no bread in the soup, yet it is thick, fresh and satisfying.
Yellow tomatoes are mild, smooth and less acidic than red ones. You can taste the subtle difference between the yellow and red tomatoes.
The addition of cucumber and bell pepper balance the natural acidity or tomatoes.
SPANISH ANDALUSIAN SALMOREJO
Salmorejo is another name and version of gazpacho. It is the term for cold tomato soup originating from Cordoboa in Andalucia, Southern Spain.
It is traditionally made with tomatoes, bread, extra virgin olive oil, garlic and salt. Normally, the tomatoes are skinned and then pureed with the other ingredients.
The cold soup is garnished with hame and hard boiled egg. Feel free to try these toppings as a garnish on this yellow gazpacho recipe.
WHAT MAKES A GAZPACHO RECIPE HEALTHY
A healthy gazpacho recipe is one that uses all fresh ingredients and does not use bread. This recipe is all vegetables, olive oil and red wine vinegar. That means this gazpacho recipe is gluten free and grain free.

HOW TO MAKE GAZPACHO ORANGE OR RED
For orange gazpacho, add 1 red tomato to the recipe. The total weight of all the tomatoes should still be 2 ½ lbs.
For red gazpacho, use only red heirloom tomatoes.
CHEF TIP
This is a great recipe for dinner parties. Serve in shot glasses as a tray passed appetizer or in small cups as a starter. Be sure to run the soup through a sieve for a more restaurant style, smooth finish.

Description
Healthy, clean ingredient and easy gazpacho recipe using heirloom tomatoes for a smooth flavor.
Ingredients
- 2 ½ lbs. yellow heirloom tomatoes
- 2 cloves of garlic
- ½ English cucumber, peeled and de-seeded
- ½ medium yellow bell pepper
- ½ small red onion
- ¼ cup red wine vinegar
- 1/3 cup extra virgin olive oil
- 1 tsp sea salt
- ¼ tsp white pepper
- ½ inch of a small red chili such as a Fresno chili (optional)
Instructions
- Wash and chop vegetables. Add all ingredients to a high-speed blender and blend well till smooth. Test for additional sea salt or seasoning as desired.
- Enjoy thick or for a smoother finish strain through a sieve. Press the soup with a spatula in order to extract as much of the liquid as possible. Refrigerate in an airtight container for a least 2 hours prior to serving. Soup holds well for 7 days.
