Whipped Cilantro Avocado Dressing
The perfect dressing to pair with a salad or enjoy as a dip. If you are a cilantro or avocado lover, this is for you.
WHIPPED AVOCADO SALAD DRESSING
I created this salad dressing for one of my meal prep clients. They work from home and I serve my client a fresh salad for lunch each week. I prepare 4-5 salads, serving them one, and individually packing the others.
They love avocado and cilantro, and we put the two ingredients in a lot of salads. I wanted to offer them a creamy salad dressing that was healthy.
I was also looking for a way to use avocado in a meal prep salad without the avocado turning brown by the time they enjoyed it later in the week.
THE PERFECT SOLUTION TO ENJOY AVOCADO ON THE GO
When you dice an avocado and add it to a salad you plan to enjoy later in the week, odds are it will turn brown. Adding an acid, such as lemon juice, will stop the avocado from changing colors.
Similar to making quacamole (when you add the lime juice) this creamy salad dressing with stay light green all week thanks to fresh squeezed lemon juice.

CHEF TIP
Use this salad dressing with any romaine, arugula or mixed green salad. Pairs well as a dip with carrots and celery, or dolloped on protein such as chicken, salmon steak.
When making a double batch, double all ingredients expect the salt.

Description
If you are a cilantro or avocado lover, this salad dressing is for you.
Ingredients
- ½ cup lemon juice (juice of 3–4 lemons)
- ½ bunch fresh cilantro
- ¼ tsp sea salt
- 1 ripe avocado
- ½ cup extra virgin olive oil
Instructions
- Add lemon juice, cilantro, sea salt and avocado to a high-speed blender. Blend on high till ingredients are incorporated.
- Slowly pour in olive oil and blend till smooth. Store in airtight container for up to 7 days.
Notes
Use this dressing as a dip with carrots, celery and jicama for a healthy snack.
