Description

Fresh and light vinaigrette using the classic French herb, tarragon. This recipe is a healthy dressing with lemon, vinegar, shallot and Dijon mustard.


Ingredients

Scale
  • ¼ cup rice vinegar (sugar free) or champagne vinegar
  • Zest and juice of 1 lemon
  • ½ small shallot
  • 1 tsp Dijon mustard
  • 2 tsp local honey
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • ½ cup fresh tarragon leaves
  • 1 cup extra virgin olive oil

Instructions

  1. Using a high-speed blender, combine vinegar, zest and juice of lemon, shallot, mustard, honey, sea salt, black pepper, fresh tarragon. Blend to combine. Slowly poor in oil and blend till smooth and emulsified.
  2. Enjoy with Heirloom Tomato & Summer Corn Salad or Radicchio & Golden Beet Salad with Warm Barley. Store in an airtight container or small glass jar for up to one week.

Notes

This recipe makes a large batch of salad dressing that holds well all week.
