REFINED SUGAR FREE SNACKS
I personal avoid processed sugar and that reflects in my cooking style. Many of my Personal Chef clients prefer I cook without sugar.
This dried fig recipe is a healthy snack or dessert recipe for anyone avoiding processed sugars. You get natural sweetness from dried figs, dates and raw almonds.
WHY USE RAW ALMONDS
Raw almonds are naturally sweet. When you remove refined sugars from your diet you can start to taste that natural sweetness in fruits, vegetables, nuts and seeds.
Truly raw almonds and raw almond butter have a delicious sweet taste. There are quite a few brands that make raw almond butter, but they all taste a bit different.
The same product will taste different from each manufacture, even when there is only one ingredient because their source is different. Try a few brands till you find one you like. You know you are truly getting raw almond butter by the very light brown color.
I recommend these raw almond butters. Note, I always buy chunky and use that style in this recipe.

MACA SUPERFOOD POWDER FOR FLAVOR
Maca is added to these healthy nut and fruit balls not just for its health benefits but also for the flavor it provides. It’s a nutty flavor and a great substitute for that peanut flavor we all love.
A little goes along way. This recipe calls for 1 teaspoon but you can add an additional teaspoon without altering the flavor to much.
CHEF TIP
Remember to use unsalted nuts and unsalted raw almond butter. If you only have these items salted then refrain from adding ¼ teaspoon of salt like the recipe calls for.
I chose raw almonds and raw almond butter because they are naturally sweet. Feel free to use roasted if that is what you have on hand, just know the flavor will be different from the intended recipe.
Using old dates? If your dates look a bit dried out, add an extra to the recipe. This treat calls for medjool dates. If you are using another type, add 2-3 more till you get a consistency that allows you to roll the paste into a ball.

Description

Ingredients
- ¼ cup raw almonds
- ¼ cup brazil nuts (about 9 nuts)
- 1/3 cup pistachios, plus ¼ cup to coat
- 5 whole black mission figs
- 4 medjool dates, pitted
- 3 Tbsp raw almond butter
- 1 tsp maca powder
- ¼ tsp fine sea salt
Instructions
- In a food processor, pulse ¼ cup of pistachios into a fine powder, set aside.
- Add almonds, brazil nuts and pistachios to mixer and pulse till finely chopped. Add remaining ingredients and blend till combined.
- Using a tablespoon or small ice cream scoop, measure and roll the paste in the palm of your hands to form 11 balls. Roll in pistachio powder to coat. Store in the fridge for 2 weeks or in the freezer for 6 to 8 months.

Super great recipe!! Nice and quick, really good snack to keep you going throughout the day, I didn’t have any almond butter so substituted in peanut butter. Just as good!!
