INGREDIENTS FOR SAUTEED SPINACH AND ONIONS
For this anti-inflammatory spinach side dish recipe, you will need the following ingredients.
Extra virgin olive oil
Yellow onions
Fresh ginger
Fresh garlic
Turmeric powder
Curry powder
Cayenne pepper
Sea salt
Black pepper
Fresh baby spinach
Cilantro to garnish
CHEF TIPS FOR COOKING SAUTEED SPINACH
Use organic baby spinach or organic loose spinach, washed well.
Use 1/2 cup of water, vegetable broth or bone broth to support the spinach wilting faster. If you don’t want extra liquid in your sauteed spinach, don’t add the liquid.
This spinach recipe is delicious garnished with cilantro and topped with paneer cheese or warm halloumi cheese.

Sautéed spinach and onions recipe with turmeric, garlic and ginger for a healthy and anti-inflammatory vegetable side dish.
Ingredients
- Extra virgin olive oil
- 2 medium yellow onion, sliced half-moon
- 2 tsp fresh ginger, minced
- 2 tsp fresh garlic, minced
- 1/2 tsp turmeric powder
- 1/2 tsp curry powder
- 1 tsp ground corriander
- Pinch of cayenne
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1/2 cup of broth or water
- 2 lbs fresh baby spinach
Instructions
- In a large pot, add olive oil and onions. Sautéed on medium-low heat till onions are translucent, about 6-8 minutes.
- Add all the spices, salt and pepper. Stir to combine and activate.
- Start adding spinach in large batches, using tongs to stir in and wilt. Add 1/2 cup of water or broth. Keep adding spinach till wilted and combined with onions.
- Add additional salt and pepper to taste. Garnish with cilantro if desired.

Enjoy with a side of rice or with Root Vegetable Mashed Potatoes
Great with protein sides of paneer cheese, halloumi cheese, chicken or paleo meatballs.
