Grinding it and mixing it in with ground beef or other ground meats is one of the easiest and most flavorful ways to use it.
Ask your butcher to grind your liver for you.
Alternatively, you can grind it yourself. Simply large dice your fresh liver. Add it to a small food processor. Pulse until you get a nice smooth consistency.
Add liver immediately to ground meat and cook. You can store ground liver in a glass airtight container for 3 days.
HIDDEN LIVER MEATBALLS
These meatballs are paleo, grain free, gluten free and serve as a great protein meal. The added ground liver makes for an holistic, nourishing meal. To make these delicious meatballs you will need the following ingredients:
Ground meat of choice (such as beef, lamb, bison, venison, etc)
Ground liver (or whole liver ground in food processor)
Fresh cilantro
Fresh Italian parsley

You can make this recipe with ground beef, lamb, bison, venison, elk, turkey or chicken.
Fatty meat works best for meatballs, so choose and 80/20 blend of dark meat.
I make this recipe with 80/20 grass finished ground beed and ground veal liver or with ground lamb and lamb liver.

Ingredients
- 2 lbs ground meat of choice (such as beef, lamb or bison)
- .25 lbs liver of choice (such as veal, beef or lamb)
- 2 Tbsp chopped cilantro
- 2 Tbsp chopped Italian parsley
- 2–3 tsp Starseed Kitchen 11 Magic Herbs & Spices
- 2 cloves garlic, minced
Instructions
- Preheat oven to 400 degrees, convection setting.
- If your liver is whole, add it to a small food processor and pulse till ground.
- Mix all ingredients in a bowl. Roll into 10 meatballs.
- Place meatballs on a baking sheet lined with parchment paper. Bake for 15 minutes.
- Enjoy immediately or store up to 4 days for meal prep.
