Cilantro Lime Chicken Thighs
Healthy cilantro lime chicken thighs recipe with fresh lime juice, cilantro and jalapeño. Great for lunch, dinner and meal prep.
This recipe uses the Lime Cilantro Jalapeno Vinaigrette as the marinated and makes enough so you have extra to enjoy on a salad with your chicken.
This recipe is gluten free and refined sugar free, using honey as the sweetener. This recipe can be made with out the honey and suitable for those following a Paleo, Keto and Whole30 lifestyle.
INGREDIENTS FOR MARINATED CHICKEN THIGHS
Bone-in, skin-on chicken thighs
Fresh cilantro
Jalapeño
Extra virgin olive oil
Fresh limes
Garlic cloves
Raw local honey
Sea salt
Black pepper
WHAT TO SERVE WITH LIME CILANTRO CHICKEN
This chicken is great served with the following:
- Over lettuce or mixed greens
- With brown rice
- With coconut rice
- Steamed vegetables
- Added to tacos
CHEF TIPS
Make a double batch of this dressing and use as a salad dressing throughout the week.
Add a whole avocado to the extra dressing and blend. Use as a dip with the chicken.

Description
A healthy chicken marinade with cilantro, lime juice, olive oil, jalapeno and local honey.
Ingredients
- 12 Bone-in, skin-on chicken thighs
- Sea salt
- Black pepper
- Lime Cilantro Jalapeno Vinaigrette
- Fresh cilantro to garnish
Instructions
- Preheat oven to 400 degrees, convection setting.
- Line a baking sheet with parchment paper. Salt and pepper both sides of chicken.
- Drizzle 1/2 cup of Lime Cilantro Jalapeño Vinaigrette over chicken thighs. Make sure to cover all sides of the chicken in marinade. Add more sauce as needed.
- Bake for 35 minutes if eating immediately or 25 minutes for meal prep.
- Place thighs on serving dish or in meal prep container. Drizzle with 1/2 cup of remaining sauce. Garnish with chopped cilantro.
