The addition of chia seeds and whole flax seeds make this a healthy overnight oats recipe with superfoods and fiber.
HEALTHY OVERNIGHT OATS
I developed this recipe for clients who were looking for something different for their morning breakfast routine. Strawberries grow locally in Orange County, California and I wanted to take advantage of local ingredients.
Pairing strawberries with cashews creates a creamy and dairy free nut milk alternative. The strawberries provide natural sweetness, so no refined sugar is necessary.
Oats are rich in carbohydrates, fiber and protein (unlike other grains).
This breakfast oats recipe is packed with protein from all the ingredients used in the recipe.
- Rolled oats
- Cashews from the Strawberry Cashew Milk
- Chia seeds
- Flax seeds
OATS WITH SUPERFOODS
I add chia seeds and flax seeds to this recipe for added fiber, superfoods and nutrients.

HOW TO MAKE STRAWBERRY CASHEW MILK
See the recipe for Strawberry Cashew Milk for directions. You’ll need the following ingredients vegan and dairy free nut milk recipe.
- 1 pint of strawberries (2-2 ½ cups)
- 1 cup of raw, unsalted cashews
- 3-4 cups of filtered water
- Pinch of sea salt
HOW TO STORE OATS FOR MEAL PREP
I like using the 2-cup glass containers from Pyrex. This size allows you to add a ½ cup or 1 cup portion, along with toppings. It makes it easy to enjoy without filling the container to full which causes spilling while eating.
CHEF TIP
If your strawberry cashew milk is too thick, add a ½ cup of water to thin oat.
If your overnight oats are too thick, add an additional ½ cup of strawberry cashew milk. Let sit for 15 minutes and give it time to absorb the extra liquid.

Description

Ingredients
- 1 cup Organic rolled oats
- 2 ½ cups Strawberry Cashew Milk
- 1 Tablespoon Chia seeds
- 1 Tablespoon Whole flax seeds
Instructions
- Place rolled oats, chia seeds and flax seeds in large bowl. Poor in 2 ½ cups of strawberry cashew milk (or preferred dairy, nut or seed milk), and stir well to combine. Cover and store in the fridge for 1 hour or overnight.
- Check consistency and add additional Strawberry Cashew Milk as desired. Portion into individual containers. Add fresh strawberries, cashews, chia seeds, flax seeds or additional Strawberry Cashew Milk as toppings. Enjoy immediately or store in airtight containers for up to 5 days.
Notes
