Red Potato Salad with Green Beans
This mayo-free potato salad is light, refreshing and full of flavor from fresh herbs.
HEALTHY POTATO SALAD
This potato and green bean salad makes a great side dish to any protein, such as grilled chicken, or steak or salmon.
This is a French-inspired recipe, reminiscent of a salad Nicoise with tender baby potatoes and crisp green beans mingling in a mustardy vinaigrette. To make it, the beans lightly blanched and crisp. The red potatoes are soft, creamy and provide color. The fresh herbs pack lots of flavor. The red onion is the perfect finishing touch and balance to the dish.
Whip up a quick and easy vinaigrette to toss with the warm potatoes, crisp beans, and crunchy red onion and you are complete. Just as delicious served warm as at room temperature, this salad is perfect for summer potlucks and picnics or an anynight dinner and it’s ready in under 30 minutes.

Small red potatoes
French green beans
Red onion
Grain mustard
Red wine vinegar
Extra virgin olive oil
Fresh dill
Fresh Italian flat leaf parsley

Description
Healthy mayo-free potato salad recipe that is light, bright and the perfect salad side dish.
Ingredients
- 1 lb small red potatoes
- small bunch of french green beans
- 1/2 red onion, thinly sliced into half moons
- 2 Tbsp grain mustard
- 1/4 cup red wine vinegar
- 1/4 cup extra virgin olive oil
- chopped fresh dill, about 1/2 cup
- chopped fresh Italian parsley, about 1/2 cup
- sea salt to taste
- black pepper to taste
Instructions
- Add potatoes to a medium pot. Cover with water and bring to a boil. Cook till soft and you can poke a fork through them. Drain and let cool.
- In a separate medium pot, bring salty water to a boil. Add green beans and immediately drain. You want them crisp.
- In a large mixing bowl, add the mustard, vinegar and olive oil. Sliced potatoes in half while still warm and toss in bowl. Add green beans, salt, pepper, red onion, and herbs. Taste test for seasoning. Add additional vinegar and olive oil in equal amounts as needed. Enjoy.
Notes
You can use small white potatoes or fingerling when the red creamer potatoes are not available. The smaller the better. Look for small round potatoes the size of a golf ball and smaller.
