Description

Healthy mayo-free potato salad recipe that is light, bright and the perfect salad side dish.


Ingredients

Scale
  • 1 lb small red potatoes
  • small bunch of french green beans
  • 1/2 red onion, thinly sliced into half moons
  • 2 Tbsp grain mustard
  • 1/4 cup red wine vinegar
  • 1/4 cup extra virgin olive oil
  • chopped fresh dill, about 1/2 cup
  • chopped fresh Italian parsley, about 1/2 cup
  • sea salt to taste
  • black pepper to taste

Instructions

  1. Add potatoes to a medium pot. Cover with water and bring to a boil. Cook till soft and you can poke a fork through them. Drain and let cool.
  2. In a separate medium pot, bring salty water to a boil. Add green beans and immediately drain. You want them crisp.
  3. In a large mixing bowl, add the mustard, vinegar and olive oil. Sliced potatoes in half while still warm and toss in bowl. Add green beans, salt, pepper, red onion, and herbs. Taste test for seasoning. Add additional vinegar and olive oil in equal amounts as needed. Enjoy.

Notes

You can use small white potatoes or fingerling when the red creamer potatoes are not available. The smaller the better. Look for small round potatoes the size of a golf ball and smaller.
