This is a healthy chia seed jam recipe. Chia seeds are a natural thickener.
You may use grey or white chia seeds for this strawberry chia seed jam recipe.
JAM WITH NO PECTIN
This natural strawberry jam recipe uses no pectin and no citric acid (like store bought jam). Pectin is a processed ingredient that helps the jam thicken while cooking on the stove. It is not necessary.
You can make this jam recipe with fresh or frozen strawberries. You will get the same delicious results. Choose what works best for you.
For a more thick jam, add an extra tablespoon or two of chia seeds. Still want it thicker? Simmer for 15 additional minutes.

How to make strawberry jam without sugar? You’ll need a drizzle of maple syrup and a scoop of chia seeds. This strawberry jam recipe is low in sugar, only using 1/4 cup of maple syrup.
There are three key ingredients to this healthy whole foods jam recipe. Additional ingredients are optional. Experiment, taste test, and decide what you like.
You will need:
- Fresh or frozen strawberries
- Chia seeds
- Maple syrup (local honey, yacon syrup or agave if you prefer)
- Vanilla extract (optional)
- Pinch of sea salt (optional)
I’ve made this strawberry jam with maple syrup and with honey at my clients request (never with sugar).
If you don’t have either at home, then make it without a sweetener, and add salt to bring out the natural sweetness of the fruit.
CHEF TIP
Feel free to substitute maple syrup with local honey as desired.

This healthy strawberry jam recipe is made with no refined sugar and no pectin.

Ingredients
- 8 c (2 lbs) Strawberries, organic
- 1/4 c Maple syrup
- 1/4 c Chia seeds
- 1 tsp Vanilla extract (optional)
Instructions
- In a medium sauce pot, add strawberries, maple syrup and chia seeds. Bring to a boil, then down to a rolling simmer for 5 minutes.
- Use potato masher and mash fruit till soft and additional liquid forms. Bring back to a simmer and let cook for 15 minutes, stirring occasionally so the jam doesn’t burn.
- Remove from stove. Mix in vanilla extract and let cool. Store jam in an air tight glass container for up to 2 weeks.
Notes
Use fresh or frozen organic strawberries.
