Description
A healthy chicken marinade with cilantro, lime juice, olive oil, jalapeno and local honey.
Ingredients

- 12 Bone-in, skin-on chicken thighs
- Sea salt
- Black pepper
- Lime Cilantro Jalapeno Vinaigrette
- Fresh cilantro to garnish
Instructions
- Preheat oven to 400 degrees, convection setting.
- Line a baking sheet with parchment paper. Salt and pepper both sides of chicken.
- Drizzle 1/2 cup of Lime Cilantro Jalapeño Vinaigrette over chicken thighs. Make sure to cover all sides of the chicken in marinade. Add more sauce as needed.
- Bake for 35 minutes if eating immediately or 25 minutes for meal prep.
- Place thighs on serving dish or in meal prep container. Drizzle with 1/2 cup of remaining sauce. Garnish with chopped cilantro.
Notes
Make a double batch of this dressing and use as a salad dressing throughout the week.
Add a whole avocado to the extra dressing and blend. Use as a dip with the chicken.
