Cilantro Lime Chicken Thighs

A healthy chicken marinade with cilantro, lime juice, olive oil, jalapeno and local honey.




  1. Preheat oven to 400 degrees, convection setting.
  2. Line a baking sheet with parchment paper. Salt and pepper  both sides of chicken.
  3. Drizzle 1/2 cup of Lime Cilantro Jalapeño Vinaigrette over chicken thighs. Make sure to cover all sides of the chicken in marinade. Add more sauce as needed.
  4. Bake for 35 minutes if eating immediately or 25 minutes for meal prep.
  5. Place thighs on serving dish or in meal prep container. Drizzle with 1/2 cup of remaining sauce. Garnish with chopped cilantro.


Make a double batch of this dressing and use as a salad dressing throughout the week.

Add a whole avocado to the extra dressing and blend. Use as a dip with the chicken.
