Paleo Beef Meatloaf
Healthy Paleo meatloaf recipe made with grass finished beef, ground pork, celery, and zesty spices for an easy one-pan meal.
This classic comfort food recipe is great for those following a Paleo, Keto or Gluten Free lifestyle. It also supports Lectin-Free (just don’t add the tomato paste).
It is a one-pan meal with vegetables baked with the meatloaf to soak up all the flavors. Enjoy this comforting homemade dish or prepare in advance for meal prep.
HOW TO MAKE MEATLOAF HEALTHY
It is all about choosing your ingredients. The source of your food, with a few ingredient swaps can make any meal healthy. Keep this in mind when purchasing ingredients for this meatloaf recipe.
- Use 100% grass fed, grass finished ground beef. A label that says grass-fed does not mean that the cow ate grass and hay. It must be labeled 100% grass finished, otherwise it may have been fed GMO corn, soy, wheat, grains, and possibly animal parts.
- You ground beef should be labeled 80/20. You want fat in your ground beef. Good quality animal fat provides flavor, nutrients, and makes the meal nourishing and satisfying.
- Adding gluten free or cauliflower breadcrumbs is optional.
- Adding an egg is optional, though it does make the dish more moist.
- Feel free to add extra celery, I always do.
COMFORT FOOD FOR MEAL PREP
This is an easy recipe to prepare on the weekend to enjoy later in the week. Bake it for 20 minutes. Then when you’re ready to heat for dinner, finish baking it for 20 minutes.
For best reheating results, pull the dish out of the fridge 30 minutes before putting it in the oven. That way the food can come to room temperature and you can get more even cooking.
MEATLOAF WITH ORGAN MEAT (BEEF LIVER)
Add organ meat to this meatloaf for a deeply nourishing meal. Simply grate 1/4 a cup of frozen beef liver on a cheese grater, and mix it in to the meatloaf mixture. You won’t even know it’s there.

Don’t have a baking dish? Make the meatloaf in a bread pan or on a baking sheet.
You can make this recipe with just ground beef. Make sure to use 1 ½ pounds of ground meat total.
Be sure to choose 80/20 ground beef. That means there is 20% fat. A leaner ground beef will make the dish dry. Fat adds moisture, makes the meal satisfying, and helps you feel full. When there is fat in a meal you often eat less. Don’t be afraid of meat with fat.
Roast any vegetable around the meatloaf you like. Or bake a potato and serve with steamed broccoli and other steamed vegetables.
Substitute whole milk with bone broth, oat milk or almond milk if you are dairy free.

Ingredients
- 1 pound 80/20 grass-finished ground beef
- 1/2 pound ground pork (or additional ground beef)
- ½ small yellow onion, small diced
- ½ cup gluten free or cauliflower breadcrumbs (optional)
- 1/3 cup diced celery
- 1 egg
- ½ cup organic ketchup or tomato paste, divided
- 3–4 garlic cloves, minced
- ½ teaspoon sea salt
- ½ teaspoon ground black pepper
- 2 teaspoons Starseed Kitchen 11 Magic Herbs & Spices
- 2 cups of sliced vegetables, such as carrots, baby potatoes, parsnips, zucchini
- 2 tablespoons extra virgin olive oil
Instructions
- Preheat oven to 375 degrees convection setting.
- Place ground beef and pork in a large bowl. Add onion, breadcrumbs, celery, egg, 1 tablespoon of ketchup or tomato paste, garlic, sea salt, black pepper and Starseed Kitchen 11 Magic Herbs & Spices. Gently mix until ingredients are well combined.
- Transfer mixture to a small baking dish. Form into a domed loaf shape. Add remaining ketchup or tomato paste evenly over meatloaf, spreading with the back of a spoon. Surround meatloaf with vegetables. Drizzle with 2 tablespoons of olive oil, season with salt and pepper.
- Bake until meatloaf is browned on top and cooked through, about 40-45 minutes.
