Description

Southern style blackberry cobbler with a cake finish in a cast iron skillet.


Ingredients

Scale
  • 23 cups fresh blackberries
  • 1/2 c butter (4 oz)
  • 1 c self rising organic flour
  • 1 c organic sugar (cane, coconut, maple, etc)
  • 1 c organic whole milk (A2 or raw)
  • 1 tsp vanilla extract
  • whipped cream (optional)
  • rosemary (optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. Place butter in the cast iron skillet and place in the oven till butter melts.
  3. Stir together flour, sugar, milk and vanilla in medium mixing bowl. Pour mix into cast iron skillet. Top with berries.
  4. Bake till cobbler is brown, and cooked through (test with a toothpick), 45-50 minutes.
  5. Garnish with whipped cream, blackberry sauce and fresh rosemary for more flavor.

Notes

For making this recipe in a large cast iron skillet as pictured, double recipe.

Substitute blackberries for other fruit such as peaches, blueberries and strawberries, or a mix of berries. This recipe does work with frozen fruit.
