Description
Southern style blackberry cobbler with a cake finish in a cast iron skillet.
Ingredients
Scale
- 2–3 cups fresh blackberries
- 1/2 c butter (4 oz)
- 1 c self rising organic flour
- 1 c organic sugar (cane, coconut, maple, etc)
- 1 c organic whole milk (A2 or raw)
- 1 tsp vanilla extract
- whipped cream (optional)
- rosemary (optional)
Instructions
- Preheat oven to 350 degrees.
- Place butter in the cast iron skillet and place in the oven till butter melts.
- Stir together flour, sugar, milk and vanilla in medium mixing bowl. Pour mix into cast iron skillet. Top with berries.
- Bake till cobbler is brown, and cooked through (test with a toothpick), 45-50 minutes.
- Garnish with whipped cream, blackberry sauce and fresh rosemary for more flavor.

For making this recipe in a large cast iron skillet as pictured, double recipe.
Substitute blackberries for other fruit such as peaches, blueberries and strawberries, or a mix of berries. This recipe does work with frozen fruit.
