Description

A beautiful and flavorful citrus baked salmon recipe with blood oranges, naval oranges, and fresh herbs of dill and parsley.


Ingredients

Scale
  • 1 1/22 lbs single cut of salmon
  • 2 Tbsp Grain mustard
  • 12 Tbsp Local honey (use a loose, runny honey)
  • 1/4 c Extra virgin olive oil
  • 2 Tbsp Chopped dill
  • 2 Tbsp Chopped Italian parsley
  • Sea salt
  • Black pepper
  • 12 Blood oranges
  • 12 Navel oranges

Instructions

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
  • Place salmon on parchment. Pat dry. Season generously with salt and pepper.
  • In a small bowl, combine mustard, honey, olive oil, dill, parsley. Mix well. Poor over salmon and cover completely with marinade.
  • Slice oranges. Arrange over salmon, layering the blood oranges with the navel oranges. Baked for 20 minutes. Serve immediately or chill and enjoy cold.

Notes

You can use any type of salmon with this recipe, such as Atlantic, Sockeye or King Salmon.

You can marinate the salmon for 24 hours before baking if you like.

This recipe is delicious cold. Bake in advance and chill in the fridge before serving. Great for brunch and picnics.
